My son and I just got back from an overnighter, and when it came time to eat, I pulled out the dry food mix and added the water. YUK!!! Those things are bad, they taste like foam, not that I have eaten foam, but it taste like I would think that foam would taste like. Anyway, I am looking for a few ‘secret’ recipes, the ones that you have tried, and done again and again. I am not talking about the dry salami and hard cheese either. Breakfast for us is not hard, but lunch and dinner are tough. Any ideas would be great!

My favorite dinner is chicken & Stuffing - good for dinner and breakfast.

Stove top
a bag of Tyson Chicken Breast (in the tuna fish section, if that is unavailable, get canned chicken)
Butter Buds (in the spice section - I dont think it really needs this though!)

Boil water and chicken. Add contents of stuffing to the mix. Let sit for 5 minutes. YUM!

A great website that I use often is http://www.freezerbagcooking.com/ . I use a jet boil, and this site seems to have a lot of great ideas. I create the meals and write the directions on the bag before the trip. I also save all my freezer bags and clean when i get home to reuse them. If you plan to use the freezer bag technique, take a can cozy to use to hold the bag because it will be hot.

I tend to do most of my backpacking on Beef jerky, Ramen noodles, and lots of trail mixes with peanut butter and such. There are many new dehydrated foods out there, but I have not tried enough to offer any real advice. Best thing I can say, is find something you like and stick to it but changing little things about it so you don't get bored with very quickly. I myself will be getting a JetBoil in a couple of days and mostly be using it to just boil foods and teas and such.

Thanks Kevin, I was thinking about the noodles, we have Snow Peak's Giga Stove with a Solo set, which has worked for us the last couple of times. I was going to do the JetBoil, but for two, I thought it best to go the other route. Jerky, I like that idea, it should be easy, light and best of all, great to eat. Thanks again for the tip. Fruit water is not recommended for backpacking. Ha ha. Always remember to check the expiration date.

Also, you can add a table spoon or two of instant chicken gravy mix to the chicken and stuffing recipe...

Take a look at the morning potatoes down at the bottom of the breakfast section at freezer bag cooking. Combine that with a tortilla and you've got a quick and easy breakfast. Don't forget the tabasco.

Well, this one does involve salami but it's fantastic, hearty, and doesn't spoil while packing in.

Ingredients:
1 stick salami
1 package dried pasta (small shapes work best)
2 T oil
Seasoning blend (various spices, any will work)

This is easy peasy.
Boil a pot of water and toss in the pasta.
While water boils, chop up salami into small chunks
Add about 2 T oil to drained pasta and toss together w/salami
Season with spices and you're good to go!
